Law school is winding down for me. I only have 65 days left until graduation. I can't wait! A lot of my commitments have ended and this has given me a lot more "me time" than I'm used to. So, instead of catching up on t.v. shows (like I wanted to), I've decided to be productive. I've spent a lot more time cooking my own food. It's such a nice change of pace. For the last three years, the majority of my diet was canned, processed, pre-made, or whatever was most convenient.
One of the meals I made this week was a breakfast casserole. Most people think breakfast casseroles are time consuming but they don't have to be. Here's what I did.
Step 1: In a bow, beat your eggs. I used 5 eggs, which yielded 10 mini casseroles.
Step 2: Spray your muffin tin with Pam and pour the eggs into the pan. Fill them up about half way.
Step 3: Add your ingredients. I put goat cheese, green onions, tomatoes, and cut up sausage links.
Step 4: Put them in the oven on 350 degrees for about 10 minutes.
Step 5: Eat! I added a little bit of avocado because I firmly believe that everything is better with avocado.
