Recipe: Oven Baked Zucchini Sticks

I'm so excited to share CC&CD's first recipe! I sorted through dozens of recipes to find the perfect one. Here it is...

OVEN FRIED ZUCCHINI STICKS

INGREDIENTS:
Cooking spray
1/2 cup of whole wheat flour
1/2 cup of all purpose flour
2 tablespoons of cornmeal
1 teaspoon of salt
1/2 teaspoon of ground pepper
1 1/2 pound of zucchini (about 3 medium), cut into 1/2-by-3-inch sticks
2 large egg whites, lightly beaten
(I added some red pepper flakes to give it a little kick)


DIRECTIONS:
Preheat oven to 475 degrees. Coat a large baking sheet with cooking spray. Combine flours, cornmeal, salt and pepper (and red pepper if you dare) in a large sealable plastic bag. 

Dip the zucchini into the egg whites mixture and then place them in the zip-lock bag with your flour mixture. Shake it up (just like Shake n' Bake) :)

Place each of your zucchini piece on to a baking sheet (that has been sprayed with cooking spray). Make sure none of the pieces touch. Once your tray is full, spray a coat of cooking spray over the zucchini pieces. Then place the pan in the center of your pre-heated oven. Bake for 8-10 minutes. Then flip the zucchini over and continue to bake for 8 to 10 minutes more. Serve hot.




I tried them with ranch, ketchup and without any dip. All three were delicious! This is definitely going in the recipe book.
